Tomatoes, Quinoa, and Kale ... Oh my!

on March 24, 2015 By Molly Huddle Coffey | News Feed
For the fifth year in a row, Rock Point School sent a team to the state-wide Junior Iron Chef Competition at the Champlain Valley Exposition. Junior Iron Chef, in its eighth year, is a cooking showcase and competition organized by Vermont FEED (Food Education Every Day) and Burlington School Food Project. Student teams create healthy recipes, focusing on local ingredients, that could possibly be served in their schools. With over 260 students from 61 schools across the state, competition can be tough! Our team, consisting of three students, worked over the past several months to develop a recipe for tomatoes stuffed with quinoa and kale. Throughout this time, students had to focus on teamwork, communication, and time management. While they did not win, we are proud of all the work they put into the competition and are so glad to taste the delicious product!

Ski and Ride 2015

on January 27, 2015 By Molly Huddle Coffey | News Feed
Staying active in the winter is much easier when you have the Green Mountains just down the road. This year, Rock Point is participating in several skiing and riding programs to encourage students to get out and enjoy the snow. Burton Chill, a learn to snowboard program, has been a partner with us for years and this year several lucky students are learning to ride with Burton. This includes free equipment, free lessons, and a weekly lift ticket to Bolton on Friday nights. Other students are participating in the Catamount Ski Cubs program at Bolton, learning how to Nordic ski on Saturday mornings. Nordic skiing is a great workout and a fabulous way to enjoy the quiet of the woods. Finally, our weekly trips to Smuggler's Notch have been a huge hit this year, with half of the student body getting up early on Sunday to hit the slopes! Students who need lessons or rentals get to take advantage of a great discount, and those who already know how to ski or snowboard can set off on their own. We are so grateful to our partners CHILL, Bolton, and Smuggs for giving our students such awesome opportunities to get outside and be active!
